Spicy Cilantro Cashew Dip (Good on Everything Sauce)

Is it a dip? Is it a sauce? I don’t know guys, but you could spread it on a shoe and it would still be delicious. It’s the best flavor combo of all time. Spicy, salty, sweet, creamy and then an unexpected bite from the lime. It’s a chip dip, veggie dip, sauce, marinade. Honestly, you could just eat it with a spoon.

RECIPE

I’ve modified Jennifer Garner’s (Pretend Cooking Show) recipe from the New York Times just a bit to reduce sugar and sodium, but you cannot taste the difference…promise.

Toss the following into a blender (and no, you don’t need a Vitamix to pull this off…any blender will do.).

1 huge bunch of cilantro
1 cup roasted salted cashews
2 tablespoons coconut aminos
1/4 cup oil of your choice
2 tablespoons swerve brown “sugar” sweetener
1 large jalapeño
4 cloves of garlic
Juice of 2-3 limes
Salt & pepper to taste

Blend until smooth and enjoy…on literally anything.
